HAPPY NEW YEAR!

 Broccoli au Gratin: 
Ingredients:

1 1/2 lbs fresh broccoli
3/4 tsp salt
3 tbsp oleo
3 tbsp flour
1 1/2 cups milk
3/4 cup grated cheddar cheese
bread crumbs
paprika
Method:

Wash and dry broccoli. Trim stalks and split flowers. Cook in pot with water to cover and 1/4 tsp salt for 10 to 15 minutes. Drain. Place in greased casserole.

In a pot, combine oleo and flour well. Add milk gradually, stirring hard. Bring to a boil, stirring often. Reduce heat and add the rest of the salt. Cook 1 minute. Add cheese. Cook until cheese is melted. Pour over casserole. Top with bread crumbs.

Bake at 325° for 25 to 30 minutes. Top with paprika and serve.
