Ingredients:
4 chicken breasts
1 tsp salt
dash of pepper
3 tbsp salad oil
1 medium sliced onion
1 clove minced garlic
1 1/4 cups tomatoes
1/2 can (6 oz) tomato paste
dash of Tabasco
1 bay leaf
1/8 tsp oregano

Method:
Wash and dry chicken. Sprinkle with 1/2 tsp salt and pepper. Brown chicken in oil in skillet. Remove chicken
from pan. Cook onion and garlic until tender, but not brown. Add and mix tomatoes, tomato paste, Tabasco, bay
leaf, oregano and 1/2 tsp salt. Bring to a boil. Add chicken. Cover, reduce heat and simmer until chicken is
tender, about 45 minutes. -OR-
Bake at 350° for 1 hour.
