Ingredients:
1 large onion (optional)
1 small red or orange bell pepper
1 small green bell pepper
1/3 cup vegetable oil
4 fresh tomatoes
2 ea 17 oz cream corn
1 ea 10 oz corn muffin mix
6 eggs, separated
1/2 lb grated swiss cheese
1/2 lb grated sharp cheddar
1 tsp salt

Method:
Sauté onion and bell peppers in oil until soft, but not brown. Add diced tomatoes. Cook for five minutes.
Mix cream corn and muffin mix. Add slightly beaten egg yolks, onion, bell peppers and tomatoes. Add cheeses.
Beat egg whites until stiff and fold into corn mixture.
Pour into greased 3 qt. baking dish. Bake at 300° for 1 hour.
