HAPPY NEW YEAR!

 Enchiladas: 
Ingredients:

1 lb ground beef, chicken or turkey
1 chopped onion
2 tsp salt
1/4 tsp pepper
2 tsp chili powder
salad oil
1 dozen 8-inch corn tortillas
2 cups sauce (recipe below)
1 1/2 cups grated sharp cheddar
Method:

Brown meat and onion. Add seasonings.
Pour oil in skillet about 1/2-inch over low heat. Dip each tortilla in warm oil, drain on paper towels.
Spoon 2 tsps sauce and 1 tbsp meat on each tortilla and top with sprinkle of cheese.
Roll and place closely in baking pan. Pour remainign sauce and cheese on top.
Bake at 350° for 15 to 20 minutes.


Sauce:

Ingredients

1 no. 2 1/2 can whole tomatoes
2 tsps chili powder
1 6 oz can tomato paste
1 tsp salt
1 chopped med. onion
1/8 tsp oregano
1 minced garlic clove
1/4 cayenne pepper
Method

Simmer approximately 1 hour, until slightly thickened.
