Ingredients:
1/2 cup minced onion
1/8 cup sliced mushrooms
1/8 cup cut bean sprouts
1/2 cup chicken or shrimp (optional)
1/2 cup minced bell pepper
1 1/2 cups uncooked rice
1 tbsp soy sauce
2 eggs, slightly beaten
3 tbsp oil
salt and ground pepper to taste

Method:
Sauté onion and bell pepper in oil until tender. Add rice; stir and brown some. Add meat, mushrooms, bean sprouts
and mix well. Add soy sauce and eggs. Stir until eggs are cooked thoroughly. Season to taste.
