Ingredients:
6 egg yolks
3 tbsp lemon juice
1/2 cup (1 stick) unsalted butter, divided into thirds
1/4 tsp salt
1/8 tsp cayenne pepper

Preperation:
Whisk egg yolks and lemon juice together in the top half of a double boiler. Heat water in lower half of double boiler,
until steaming but
do not boil. Place top of double boiler on bottom to slowly heat yolks and juice. Add 1/3 butter at a time, whisking
continuously until butter completely melted into mixture. After all butter is stirred in, add salt and cayenne, whisking until
well blended. Serve immediately.
