Method:
Blend ingredients above line. Let stand for three days to ferment.
Combine fermented mixture, 4 cups flour, salt and sugar in bowl. Stir fast for 3 minutes.
Place in greased bowl and cover. Let rise until doubled.
Combine baking soda, 1 cup flour. Stir into risen dough.
Place dough on floured surface. Blend in 1 cup flour until smooth.
Divide dough in half. Shape into two loaves. Place on greased cookie sheet. Cover.
Let rise until doubled.
Brush dough with water. Score tops diagonally. Bake at 400° for 45 to 50 minutes.
