Ingredients:
2 - 4 sourdough English muffins, halved
(sandwich size where available)
(toasted optional)
1 or 2 bags fresh spinach
1/2 lb crab or imitation crab*, flaked per person
2 eggs per person
hollandaise sauce (
recipe here)

Preparation:
Boil or steam spinach for 10 minutes. boil or steam crab meat until hot to taste (10 minutes). Poach eggs
per your preferred method.
Build on plate from bottom up: English muffin halves, spinach, crab, eggs and top with hollandaise sauce.
Goes great with home-fried potatos and home-made
coffee cake.
*Real crab can sometimes be too salty for this recipe.
